Caravelle Saigon Announces New Director of Food and Beverage

Caravelle Saigon has officially announced its new Director of Food & Beverage, Mr Elliot Gould. To date, Elliot has enjoyed a successful career in the hospitality industry with his current appointment adding to an already impressive resume. With his vast knowledge and experience in the industry gained from working in some of the region’s most respected names in resorts and hotels, Elliot is a fine acquisition for the Caravelle Saigon team.

Prior to his arrival in Ho Chi Minh City, Elliot, originally from London where he owned and operated a cocktail bar, worked at the Phuket Marriott Resort & Spa for 2 years and before that, the JW Marriott Hotel Hanoi for 3.5 years, both as part of the pre-opening team.

However, this is his first time living and working in Saigon, something he’s looking forward to: “It’s been three years since I visited Saigon and so much has changed in that time,” he says, “and with all the changes going on at Caravelle, it’s an exciting time to be here.”

Elliot’s area of expertise in particular is in bars and events, including weddings and corporate events, and with the renovation of Caravelle Saigon’s outlets underway or about to begin, such as Reflections Restaurant, the iconic Saigon Saigon Rooftop Bar and the further development Events on 26, Caravelle Saigon’s unique rooftop event space, he sees it as the perfect opportunity to add his own touch to those projects.

“I’m excited about the changes because Caravelle Saigon is steeped in history, however the direction it’s headed is one of modernity, but not at the expense of its history,” he says. “Reflections Restaurant will have an entirely new concept from layout to menu while still overlooking one of Saigon’s most significant historical landmarks, Lam Son Square. Saigon Saigon Rooftop Bar will receive a face lift, but will retain some of the classic elements that have helped make it so famous. And then there’s the rooftop event space, Events on 26, which will lend itself to creative event ideas, such as picnics, sporting event themed weeks and lazy Sunday sessions.”

Outside of work, Elliot has a passion for all things food and beverage and is a self-confessed lover of the urban lifestyle, so he’s looking forward to sampling Saigon’s nightlife, particularly the city’s plethora of Japanese restaurants and its growing list of whiskey dens and cocktail bars.

He also enjoys keeping fit, having successfully completed four marathons, so don’t be surprised if you see him lining up in the city’s next marathon or joining the hotel’s General Manager, Michael Robinson, on his regular Thursday morning jogs with guests through the city’s streets.
